My first post and my favorite cookie! Madeleine is the perfect treat.
I lived in England for a few years and gained an intense love for tea. I spent two years on the search for the perfect cookie to pair to specific teas I enjoy. What I was missing was a cookie that was quick to make and goes well with a variety of different teas.
When I made my first Madeleine, I found that cookie. Over the years I have developed many flavors with the base batter.
Today I’ll be sharing my cinnamon version.
This cookie is crisp on the edges with a cake-like middle. It’s not overly sweet. A touch of sprinkled powdered sugar finishes the flavor.
You do need a special pan to make the cookies. I would invest in a decent mid-range product as these cookies like to stick. The pan will pay for itself in no time. There are so many different flavor profiles available, you can make a different cookie each week!
I hope you enjoy the cookie as much as I do. Pair it with a stout black tea.
